Vegetable Egg Rolls

Ingredients

  • 1 tsp canola oil
  • 1 tbsp soy sauce
  • 1/2 tsp toasted sesame oil
  • 2 1/2 cups coleslaw mix
  • 2 scallions, sliced
  • 10 egg roll wrappers
  • 1 jar sweet & sour sauce

Preparation

Step 1

Heat oil over medium-high heat. Cook coleslaw mix, ginger, and scallions until they start to wilt. Add soy sauce and sesame oil. Cook 1 minute; let cool.

Step 2

Fill each wrapper with 2 tbsp of mixture. Brush edges with water, fold sides toward center and bottom toward the top over the filling. Press to seal.

Step 3

You can either fry egg rolls in hot oil until golden brown, or brush with beaten egg white and bake at 500° for 7-8 minutes.
