Carrot Cake

Ingredients

  • 2 cups flour
  • 2 tsp. baking powder
  • 1 ½ tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 ½ cups olive oil
  • 1 cup sugar
  • 4 eggs
  • 2 cups carrots - grated
  • 1 small can pineapple - crushed
  • 1 ½ cup walnuts - chopped
  • 1 tsp. vanilla extract

Preparation

Step 1

Preheat oven to 350°F.

Step 2

Mix flour, baking powder, baking soda, salt and cinnamon together.

Step 3

Combine oil and sugar in large mixing bowl, beat thoroughly with electric mixer. Add eggs one at a time. Beat well after each addition.

Step 4

Mix with flour mixture. Stir in remaining ingredients. Spread batter evenly into well grease and floured 9x13 pan.

Step 5

Bake for 60 minutes or until toothpick comes up clean.

Ice with cream cheese frosting.
