Ingredients
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp chopped garlic
- 2 tbsp lime juice
- 1/4 C olive oil
- 2 tbsp chopped coriander
- 1 1/2 lb chicken breast
- 1 sweet red onion, sliced in thick rounds
- 1 red pepper, cut in quarters
- 2 zucchini, cut in half lengthwise
- salt & pepper
- dressing:
- 1/2 C mayonnaise
- 1/4 C salsa
- 2 tbsp chopped coriander
- 1 tbsp lime juice
- salt & pepper
- Garnish:
- 1 avocado, sliced
- 2 C toasted tortilla chips
Preparation
Step 1
Combine chili powder, cumin, garlic, lime juice, olive oil and coriander. Lay chicken and vegetables on lightly-oiled roasting pan. Brush spice mixture over chicken and vegetables. Bake at 350 degrees for 45-60 mins or until chicken is cooked through.
Step 2
Combine dressing ingredients. Reserve.
Step 3
Surround platter with sliced avocado and tortilla chips. Slice chicken and vegetables, add to center of platter. Drizzle dressing over vegetables
You can substitute firm tofu for chicken to make this a vegetarian dish.
