Potato Carrot Onion Chicken Soup

Ingredients

  • 1 Chicken, chopped into big chunks, skin removed
  • 2 large potatoes, cubed
  • 2 carrots, chop in thick pieces
  • 2 onions, quartered
  • Handful of Conpoy
  • 3 Litres Water

Preparation

Step 1

Blanch chicken in boiling water for about 5 minutes, then rinse with cold water, set aside.

Step 2

In a stock pot, pour in the water and conpoy, bring to a boil.

Step 3

Add in the cubed potatoes, carrots and quartered onions and Chicken pieces

Step 4

Bring to a rapid boil for 10 minutes, then reduce to simmer for about at least another 45 minutes.
