Cabernet Crusted Duck Pizza

A cabernet-kissed crust.....topped by savory duck and gooey Gouda. Share a few slices with your Valentine - this pizza can be eaten while reclining in front of a crackling fire, and tastes even better with a slice in one hand and a glass of wine in the other.

Ingredients

  • Toppings:
  • 2 duck legs
  • Salt and pepper to taste
  • Cooking spray
  • 1 1/2 cups vegetable broth
  • 1 1/2 cups diced tomatoes
  • 3 cloves garlic, minced
  • 1 tablespoon rosemary, finely chopped
  • 3 shallots, thinly sliced
  • 1 cup mixed greens
  • 1 cup aged gouda, grated
  • Dough:
  • 1 cup Cabernet Sauvignon
  • 1 1/4 cups all-purpose flour
  • 1/2 envelope instant yeast
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil

Preparation

Step 1

Sprinkle duck legs with salt and pepper to taste. Spray a skillet (with cover) just large enough to fit the duck legs in a single layer with cooking spray. Place duck legs skin-side-down in the pan and cook on high heat for 5 minutes or until skin is crispy. Turn legs over and fill skillet with vegetable broth until it is halfway up the sides of the duck. Cover and cook on medium-low heat for 30 minutes, then remove from pan and let cool.

Step 2

Meanwhile, prepare the dough and remaining toppings. Pour wine into a medium saucepan and bring to a boil. Turn heat to medium high heat and cook until liquid is reduced by half (you should have 1/2 cup of liquid). Let cool to between 120 and 130 degrees, then pour into a large mixing bowl. Add the flour, yeast, salt and olive oil. Mix well, then knead for 5 minutes. Cover with plastic wrap and allow to rest for 10 minutes. Shape into a pizza round and let rise for 30 minutes.

Step 3

While dough rises: In a medium saucepan, cook tomatoes, garlic, rosemary, salt and pepper for 10-15 minutes on medium heat, stirring occasionally. Spray a medium skillet with cooking spray and cook shallots on medium-high heat until browned on the edges, stirring often, about 5-10 minutes. When duck is cool enough to handle, shred into bite-sized pieces.

Step 4

When dough has risen, spread with the tomato sauce, then top with the mixed greens, Gouda, shallots and duck. Place on a pizza stone (or baking sheet) and cook for 20 minutes*. Slice and serve.

*For a crisper crust, bake the un-topped crust for 10 minutes, then add the toppings and cook for an additional 10-15 minutes.
