Banana in pajamas bread ;)

This banana bread is a slice of interesting mixed with a dash of exotic. Nutmeg highlights the walnuts while the cinnamon wakes up the dates and brings out the banana which makes everything work together. I cant imagine having plain old banana bread when I can have the homiest and healthiest recipe to share with friends and family.

Ingredients
- 3 (over) ripe bananas
- 1/2 - 3/4 cup sugar (less ripe, the more sugar you will need)
- 2 eggs
- 2 cups all purpose flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg (optional)
- 1/2 cup chopped dates (or favorite dried fruit)
- walnuts
Preparation
Step 1

Mash the bananas in a large bowl and add the sugar. The sugar will help liquefy the mixture.
Step 2
Whisk in the eggs, vanilla then shift in the dry ingredients. Stir until evenly combined. Fold in the chopped dates and walnuts.
Step 3
Bake in a greased then floured loaf pan at 325 degrees for 1 hour or until the cake tester comes out clean. Allow to stand and cool for 15 minutes before removing from pan.
Replace half of the sugar with brown sugar and be amazed. You can replace 1 cup of AP flour for whole wheat to get a healthier recipe. Try not to over mix. Walnuts makes this recipe even better but it could do without if you're allergic :)
