Leek and Potato Soup with Port and Pears

Ingredients

  • 2 tbsp margarine or butter
  • 3 pears
  • ½ cup white Port
  • 6 cups chicken or vegetable stock
  • 1 cup chopped onion
  • 3 leeks
  • ¼ sliced cup sliced celery
  • 2 cups peeled and diced potatoes
  • ¼ cup milk
  • Salt and freshly ground pepper
  • 4 oz Stilton (or other blue cheese) crumbled

Preparation

Step 1

Peel and chop pears in small chunks.
Melt butter in a skillet on medium heat, add pears and cook for about 10 minutes or until tender and browned. Add Port and bring to boil. Set aside.

Pour stock into a large pot. Add onion, leeks, celery and potatoes. Bring to boil, reduce heat to low, cover and simmer for 15 minutes or until all vegetables are tender. Add pears and Port and cook together 5 more minutes.

Purée in food processor or blender until smooth. Return to pot, add milk, season with salt and pepper and simmer together for 5 minutes to blend flavours.

Stir in cheese, just before serving.
