Herbed Tortellini with Mozzerella and Parmesan Filling

Ingredients

  • 3 cups all-purpose flour
  • 4 large eggs
  • Dash of salt
  • 2-3 T combined of the following spices: Powdered Garlic, Oregano, Basil, Powdered Parmesan, Ground Red Pepper, Ground Sun dried Tomatoes, Onion Powder
  • For Filling:
  • Around 1 cup grated fresh mozzarella
  • 1/3 cup fresh ground Parmesan
  • Pinch Garlic Powder

Preparation

Step 1

Using your stand mixer and dough hook, combine all ingredients on low speed until very well combined and the dough is a big ball.

Step 2

Knead the dough by hand until smooth and it pushes back. (at least 15 minutes).

Step 3

Wrap in plastic while you prepare the filling.

Step 4

Mix all filling ingredients together and have tread when you are starting to roll out the dough.

Step 5

The dough needs to rest for around a half hour or more before you roll it.

Step 6

Cut the dough into thirds and re-wrap the 2/3 you aren't rolling so that it doesn't dry out.

Step 7

Roll out the dough with a pin as thin as possible.

Step 8

Using a two inch diameter cookie cutter, cut as many circles as you can.

Step 9

Once cut out, put a small amount of the cheese filling and apply a small amount of water to half of the circle with your fingers, then fold in half, making sure to seal tightly.

Step 10

Pull the sides together to form the classic tortellini shape and pinch the ends together. Put the tortellini into a dish towel as you go so that they don't stick to your work surface. Move on to the remaining dough and do the same. Prepare as desired.

The dough is pretty thick so watch your mixer; you may have to fight it a bit.
