Peanut Butter S'mores Cookie Cups

Ingredients

  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons milk
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 cup marshmallow fluff
  • 1/2 cup chocolate chips

Preparation

Step 1

Preheat oven to 375 degrees. Grease a mini-muffin tray.

Step 2

Cream together the butter, peanut butter, and sugars until light and fluffy. Beat in the egg. Stir in the milk and vanilla.

Step 3

In a medium bowl, combine the flour, and baking soda. Gradually add to the creamed mixture and beat until well combined.

Step 4

Roll a teaspoonful of dough into balls and place into each well of the mini-muffin tray. Use your fingers to press it in a bit to cover the sides and bottom of each well.

Step 5

Drop in a couple of chocolate chips and a teaspoon of marshmallow fluff into the center of each. Roll half a teaspoonful of dough into a ball, squish it flat and place it over the top of the fluff, making sure to seal the edges. Repeat to cover each cookie.

Step 6

Bake for 12-14 minutes or until golden brown. Cool completely before removing from the muffin tin.
