Oatmeal Cookies

You must try these cookies. They will soon become your favorite! These can be chewy or crunchy depending on the texture you like in a cookie. This was my Welsh grandmother's recipe that has been enjoyed throughout the years. You can double the recipe, the cookies freeze well.

Ingredients

  • 1 cup butter
  • 1 egg
  • 1 cup white sugar
  • 3/4 cup brown sugar
  • 1 cup coconut
  • 1 cup finely chopped walnuts
  • 1/2 tsp salt
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1 1/2 cups rolled oats
  • juice of a whole lemon

Preparation

Step 1

Cream butter, add brown sugar and white sugar, blend. Beat in the egg. Add vanilla & lemon juice. Mix the flour, salt, baking soda, & baking powder together. Add the flour mixture to the rest of the cookie batter. Stir in rolled oats, coconut & walnuts.

Step 2

Bake on an ungreased cookie sheet at 350 F until slightly golden. Under bake the cookie if you want a chewy cookie.

If you bake your cookies on parchment paper it stops the bottoms from burning and makes for an easy clean up. For a chewier cookie pull them out of the oven earlier. For a crunchy cookie, bake until golden brown.
