Ingredients
- 2 Tbsp olive oil
- 1 Medium onion, chopped thinly
- 1 Green pepper, chopped thinly
- 1 Garlic clove minced
- 1 1/2 Tbsp Curry powder
- 4 Boneless, Skinless Chicken breast cut in to 1 inch cubes
- 4 Medium Potatoes Peeled and cut in to 1 inch cubes ( Can leave skin on if wanted but wash good)
- 1 Can (16oz) of coconut milk
- 1 Cup (8oz) of chicken liquid stock
- Salt and pepper to taste
Preparation
Step 1
In large pan saute onion in oil until soft
Add green pepper and garlic saute 2 min
Add curry powder saute 1 min
Add chicken,Potatoes , coconut milk, salt and pepper
to taste and enough stock to cover
Bring to a boil, cover and simmer for 30 min until potatoes are tender
Serve with rice
