Apricot Jam
This delightful jam can be made at any time of year as it uses dried apricots.

Ingredients
- 450 Gram Dried apricots (1 lb)
- 1.75 Litres Water (2 1/2 pints)
- 1 Lemon, juice only
- 1.8 Kilogram Sugar (4 lb)
Preparation

Makes 2.3 kg (5 lb)
Wash the apricots, cut them up if you like and soak them in water for 24-48 hours. Simmer the fruit and water for 30 minutes, add the lemon juice (or 1/2 teaspoon citric or tartaric acid) and sugar.
Stir until the sugar has dissolved and boil rapidly until the setting point is reached. Skim, pot and cover.
