Silver Palate Chicken Marabella
This can be made the night before and feeds a lot of people. It is fast and simple. Everyone raves about this dish!

Ingredients
- 4 chickens, 2.5 lbs each (Thighs work really well and you can do them skinless)
- 1 head of garlic minced or crushed
- 1/4 cup dried oregano
- salt & pepper to taste
- 1/2 cup red wine vinegar
- 1 cup pitted prunes
- 1/2 cup pitted Spanish green olives
- 1/2 cup capers
- 6 bay leaves
- 1 cup brown sugar
- 1 cup white wine
- 1/4 cup parsley or fresh cilantro finely chopped
Preparation
Step 1
Throw all ingredients into a large roasting pan and stir around. Put the chicken in the pan. Sprinkle with salt and pepper and spoon the marinade over both sides. I have eliminated 1/2 cup of olive oil from the recipe and it works just fine. I have also been successful with skinless chicken. Leave chicken in pan with marinade over night.
Step 2
Put the chicken in the oven and bake at 350 F for an hour. You can serve the chicken with the juice with rice or mashed potatoes. It is delicious!
