Ingredients
- 12 ozs mixed mushrooms
- 1 pound potatoes
- leaves from a bunch of parsley or basil
- 4 garlic cloves, crushed
- salt & pepper
Preparation
Step 1
Preheat oven to 350F. Thinly slice mushrooms and potatoes. Generously oil baking dish that will hold potatoes and mushrooms in a layer no more than 1 1/2 inches deep. In large bowl, toss together mushrooms, potatoes, parsley/basil, garlic, salt & pepper. Spread mixture in dish in an even layer and bake 45m or until tender, turning halfway through.
