Ingredients
- 1 1/2 Cup Rice
- 3 Cups Reduce-Sodium Chicken Broth
- 1 Tbsp Peanut/Canola Oil
- 10 ounces Chicken (cooked)
- 1 1/2 Cups Yellow Onion (chopped)
- 1 1/4 Cups Celery (chopped)
- 1 Cup Green Bell Pepper (chopped)
- 2 Cloves Garlic (minced)
- 2 tsp Thyme Leaves (chopped)
- 1/4-1/2 tsp Cayenne Pepper
- 1/4 tsp Salt
Preparation
Step 1
Bring rice and broth to boil in a large saucepan. Let simmer for 50 min. Let stand 10 min.
Step 2
Heat oil and chicken until they start to brown. Add onion, celery, green and red pepper, and garlic until onion is soft. Stir in thyme, cayenne. Stir all together.
