Dirty Rice

Ingredients

  • 1 1/2 Cup Rice
  • 3 Cups Reduce-Sodium Chicken Broth
  • 1 Tbsp Peanut/Canola Oil
  • 10 ounces Chicken (cooked)
  • 1 1/2 Cups Yellow Onion (chopped)
  • 1 1/4 Cups Celery (chopped)
  • 1 Cup Green Bell Pepper (chopped)
  • 2 Cloves Garlic (minced)
  • 2 tsp Thyme Leaves (chopped)
  • 1/4-1/2 tsp Cayenne Pepper
  • 1/4 tsp Salt

Preparation

Step 1

Bring rice and broth to boil in a large saucepan. Let simmer for 50 min. Let stand 10 min.

Step 2

Heat oil and chicken until they start to brown. Add onion, celery, green and red pepper, and garlic until onion is soft. Stir in thyme, cayenne. Stir all together.
