Ingredients
- 16 potatoes
- tbsp plain flour
- ½ cup dripping
- 3 tbsp vegetable oil
Preparation
Step 1
Heat oven to 375F.
Peel the potatoes and cut in half or leave whole if they are small. Place into a saucepan, cover with cold water, then bring to the boil. Set the timer and boil for 2 mins.
Drain the potatoes well, then toss in the colander to fluff up their surfaces, sprinkling over the flour as you go.
Place oil and dripping in a large roasting tray. Place in oven. When sizzling, lower in the potatoes carefully, turning to coat.
Roast for 20 minutes, then remove from the oven and gently turn them over. Return to the oven and cook for another 20 minutes. Turn again, cook for a further 20 minutes.
