Porcupine Meatballs

Ingredients

  • 1½ lbs. ground beef
  • 2 large eggs
  • 1½ cups long grain instant white rice
  • 2 tablespoons worcestershire sauce
  • 1 tablespoon garlic salt
  • 1½ teaspoons salt
  • 1½ teaspoons ground black pepper
  • 64 ounces V8 vegetable juice

Preparation

Step 1

In a large bowl combine ground beef, eggs, rice, worcestershire sauce, garlic salt, salt and pepper.

Roll into 2-2½ inch balls (between a golf ball and a tennis ball size).

Step 2

While rolling into meatballs, add the V8 juice to a large deep covered fry pan and bring to a boil.

Step 3

Once the V8 juice is boiling and all meatballs are rolled, add the meatballs into the fry pan.

Step 4

Cover the fry pan and cook over medium-low heat at a simmer for approximately 45 minutes.

Stir the meatballs and sauce occasionally.

Skim the grease from the sauce with a flat spoon into another bowl to discard once cooled.

Once the meatballs are cooked through and the sauce has reduced and thickened, remove from the burner and serve over additional cooked rice or mashed potatoes.
