Shrimp Stir Fry

Ingredients

  • 4 tsp. canola oil (divided)
  • 2 tbsp. soy sauce (divided)
  • 3 garlic cloves minced
  • 1 1/2 pounds shrimp
  • 2 tbsp. minced fresh ginger (or ground ginger)
  • 8 ounces mushrooms quartered
  • 1 bell pepper sliced
  • 8 ounces snow peas
  • 4 scallions cut
  • 1/4 tsp. red pepper flakes

Preparation

Step 1

Whisk together 2 tsp. of oil and 1 1/2 tsp. soy sauce and garlic
Add shrimp and toss to coat
Heat pan and cook shrimp, then transfer to plate
Heat remaining oil
Add ginger and cook 30 sec.
Add veg and cook approx. 4 min.
Stir in shrimp and add remaining soy sauce
