Turkey Manicotti

Ingredients

  • 2 slices bread
  • 2 ilbs ground turkey
  • 1/4 cup chopped oniion
  • 2 tbsp. minced garlic or 3 cloves
  • 1 cup fresh shredded mozzarella
  • 1/2 cup fresh grated parmesan
  • 14 manicotti shells, cooked and drained
  • 1 large jar spaghetti sauce
  • 2 containers ricotta cheese (seasoned with salt, pepper, basil)

Preparation

Step 1

Soak bread in water. Squeeze to remove excess water. Tear into small pieces and set aside.

Step 2

In a skillet, cook the turkey, onion, and garlic until meat is no longer pink; drain.

Step 3

Stir in the bread and cheeses. Mix well.

Step 4

Spoon into prepared manicotti shells.

Step 5

Pour half of the spaghetti sauce into a greased 13X9 dish. Arrange shells over sauce. Top with the remaining sauce.

Step 6

Cover and bake at 350 degrees for 25-30 minutes.
