Corn Bread

Mom's recipe

Ingredients

  • 1/4 cup shortening
  • 1 cup milk
  • 1 egg beaten
  • 4 teaspoon baking powder
  • 1 cup cornmeal
  • 1 cup all purpose flour
  • 2 to 4 tablespoon sugar
  • 1/2 teaspoon salt

Preparation

Step 1

Heat oven to 400 degrees.

Step 2

In 8" or 9" square baking pan or 10" ovenproof skillet melt shortening in oven; tilt pan to coat bottom evenly.

Step 3

Combine dry ingredients add melted shortening, milk and eggs, mix just till blended.

Step 4

Pour into hot pan. Bake 20 to 25 minutes or until golden brown or toothpick inserted in center comes out clean.

Bake 15 to 20 minutes for muffins or corn sticks.
