Ingredients
- 1 rotisserie chicken, meat removed and shredded
- 2 cups grated cheddar; divided
- 16 oz. sour cream
- 1 can cream of chicken soup
- 1/4 cup chopped onion
- 1/4 cup chopped green peppers
- 1 can rotel tomato and chile mix

- 12 8 inch tortillas
- 1 can enchilada sauce
Preparation
Step 1
Mix all ingredients except enchilada sauce and 1 cup grated cheddar in a large bowl.
Step 2
Spoon onto tortillas and roll, place seam side down into a greased baking dish.
Step 3
Bake at 350 degrees for 40 minutes until heated through, covered with foil.
Step 4
Take off foil, add enchilada sauce and cheese.
Step 5
Bake for an additional 10 minutes, uncovered.
