Dijon Salmon

Ingredients

  • 5 6oz salmon fillets
  • 2 Tbs fresh chopped parsley
  • 3 cloves of chopped garlic
  • 1 1/2 tsp of Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 Tbs olive oil
  • 1 Tbs fresh lemon juice

Preparation

Step 1

Pre heat oven to 450 °
In a medium bowl combine all ingredients (except for fillets)
Mix well.
Place salmon fillets on a lined baking sheet
Using a basting brush brush salmon with mixture on both sides
Top with lemon slice
Bake for 12 minutes. .

Serve with side dishes of your choice. I prefer whole grain rice or quinoa with roasted vegetables
