Eggplant and Chocolate Chip Cookies

Ingredients

  • 2 cups shredded eggplant
  • 2 large eggs
  • 1 cup oats
  • 0.5 cup brown sugar
  • 0.25 granulated sugar
  • 1 tsp vanilla extract
  • 0.5 cup semisweet chocolate chips
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 2 sticks of butter

Preparation

Step 1

Preheat oven to 350 F

Step 2

Whisk flour and baking soda in a medium bowl

Step 3

Mix butter and sugars in a mixing bowl and then add eggs and vanilla. Mix in eggplant evenly

Step 4

Slow mix together both bowls until you have a stiff dough. Stir in chocolate chips and oats

Step 5

Place dough balls onto cookie sheet and bake for 15 minutes or until golden-brown
