Ingredients
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 tsp dried rosemary leaves
- 1/2 tsp dried basil leaves
- 1/2 tsp dried thyme leaves
- 2 Tbsp vegetable oil
- 1 16 ox can tomatoes, drained & cut into bite sized pieces
- 3/4 cup ketchup
- 1/4 - 1/2 cup apple cider vinegar
- 1 Tbsp brown sugar
- 1/2 tsp salt
- dash of pepper
- 2.5 - 3 lbs chicken pieces, skinned OR 6 Quorn Nak'd Chicken Cutlets (veg)
- Hot cooked noodles
Preparation
Step 1
In Dutch oven or large skillet, saute onion, garlic and herbs in oil until onion is tender-crisp.
Step 2
Stir in tomatoes, ketchup, cider vinegar, brown sugar, salt & pepper.
Step 3
Add chicken and bring to a boil.
Step 4
Reduce heat and simmer, uncovered, 45 minutes or until chicken is tender.
Step 5
Serve chicken & sauce over noodles.
Makes about 3 cups of sauce.
