Sour Cream Chocolate Chip Loaf

Ingredients

  • 1 cup whole wheat flour
  • 1/2 wheat bran
  • 1/4 cup unsweetened applesauce
  • 1/4 cup egg substitute (or one egg)
  • 1/4 crushed chocolate chips (i LOVE dark chocolate! I just measured out the chips, and put them into a zip log bag and pounded with a hammer them until very crushed)
  • 1 cup fat free sour cream
  • pinches of baking soda, baking powder, and salt

Preparation

Step 1

First mix the wet ingredients well and then add the dry ingredients. Bake at 350 degrees in a greased loaf pan for about 45-50 mins, until golden brown.

What I love about this bread is that it naturally forms a crust on the outside but maintains a soft center.
Also, by crushing the chocolate chips, you increase their surface area which allows you to use less but still get all the flavor in each bite...YUM!
