sauteed shrimp with garlic and herbs

Ingredients

  • 2 dozen shrimp
  • 1/4 c + 1 tsp olive oil
  • 3 cloves of garlic, minced
  • 1/2 tsp oregano
  • 3 med green onions (white and green part separated)
  • 2 1/2 Tbsp lemon juice
  • 2 tbsp dry white wine
  • 1/4 tsp sale
  • 1/2-3/4 tsp pepper
  • 2tbsp unsalted butter
  • 1tbsp minced flat leaf parsley

Preparation

Step 1

wash and devain the shrimp and remove the tales

Step 2

in a large skillet combine 1/4 c of the oil with the garlic, oregano, and onion whites. Cook over medium heat, stirring occasionally, until the oil is gently simmering. (about 5 min)Don't let the garlic brown

Step 3

arrange shrimp in pan cut sides down and tails up. Increase heat to high. when shrimp start to sizzle, cook for 30 seconds. Turn with tongs and cook for 30 seconds on each of the other 2 sides.Then cook, stirring frequently, until opaque throughout, about a min longer. Add lemon juice and wine and simmer until sauce thickens, about 1 1/2 min.sprinkle salt, pepper, and 1 tbsp of water over shrimp and cook, stirring for 30 seconds

Step 4

add remaining 1 tbsp oil to the pan; then swirl in butter until incorporated. Stir in the sliced green onion and parsley until evenly distributed. Arrange shrimp on warmed plates and spoon sauce on top
