REAL CHEESY SQUASH AND ONION BAKE

Ingredients

  • Butternut Squash
  • Vidalia Onions
  • Low Fat Cheddar Cheese
  • Fat Free Milk
  • All purpose Flour
  • Margarine
  • Kosher Salt
  • Nonstick Cooking Spray
  • Whole Wheat Bread Crumbs

Preparation

Step 1

Preheat oven to 350*F
In a large saucepan, cook squash, and onions in a small amount of boiling water for 10 minutes until tender. Drain and set aside.

Step 2

In a medium saucepan, melt margarine over medium heat. Stir in flour and mix well. Slowly mix in milk and continue to stir until mix is thick and bubbly. Remove from heat and stir in cheese and salt until melted

Step 3

Coat a 1 - 1 1/2 quart baking dish. casserole dish with cooking spray. Spoon in squash mixture and add bread crumbs.
Bake for 25 minutes until golden and cheesy.
