Strawberry Cheese Cake Swirl

Ingredients

  • 1) 1 cup graham cracker crumbs
  • 2)3 Tbsp sugar
  • 3)3 Tbsp butter(melted)
  • 4)1 Pkg( 8 Oz) fat free cream cheese - at room temperature
  • 5)1 cup sugar
  • 6)3 tbs flour
  • 7)1 tbsp vanilla extract
  • 8)1 cup fat free sour cream
  • 9)2 eggs
  • 10)1/4 cup seedless strawberry jam

Preparation

Step 1

1)Heat oven to 350 F.

2)Line a 13*9 inch panwith foil,with ends of foil extending over the sides.I use a standard loaf pan.

3)Mix graham cracker crumbs,3 tbsp sugar and 3 Tbsp butter(melted) together in a mixer.Press onto bottom of foil lined pan.Bake for 10 minutes.Take out of the oven.

4)Beat cream cheese (room temperature),if straight out of the fridge zap it in the microwave for 15 seconds (aluminium foil removed).Add one cup sugar,3 tbsp flour, sour cream and vanilla extract.Mix well with rubber spatula (or hand mixer).Add eggs one at a time mixing at low speed util blended.Pour over the crust in the baking pan.

5)Drop small spoonful of jam over the batter and gently swirl with a knife to get a marbling effect.

6)Bake 40 minutes or until center is almost set.Little bit of jiggle in the middle is alright .Refrigerate for 4 hours at least.Use foil handle to remove from baking pan.

7)Cut into slices serve with dollop of whipped cream, fresh cut fruit and mint leaves.
