Ingredients
- 24 oz. Boneless Skinless Chicken Breasts
- 1 Celery Rib
- 1/2 Onion - Diced
- 1 Clove Garlic
- 16 oz. Chicken Broth
- 1/2 cup Cayenne Pepper Sauce
Preparation
Step 1
In a crock pot, combine chicken, onion, celery stalk, garlic and broth (enough to cover chicken, use water if necessary). Cover and cook on high 4 hours.
Step 2
Remove the chicken from pot, reserve 1/2 cup broth and discard the rest. Shred the chicken with 2 forks, return to pot with the 1/2 cup or reserved broth and the hot sauce and set on high for an additional 30 minutes.
Makes great leftover sandwiches.
Lettuce Wraps: Wrap chicken in large lettuce leaves (Bibb or Iceburg) and top with shredded carrots, celery and dressing of choice)
Potato Skins: Cook Potato and scoop out leaving about 1/4-inch thick wall; season with salt & pepper and spray with oil. Bake at 450 for 10 minutes. Top with chicken and shredded cheese and bake 5 minutes. Top with dressing, carrots and celery.
