Banana and Hazelnut Slices

Ingredients

  • 125 Gram Butter (4 1/2 oz)
  • 125 Gram Soft brown sugar (4 1/2 oz)
  • 2 Eggs, beaten
  • 125 Gram Wholemeal flour (4 1/2 oz)
  • 2 Teaspoon Baking powder
  • 2 Medium Bananas, mashed
  • 75 Gram Hazelnuts, chopped (3 oz)
  • Caster sugar, for dusting

Preparation

Step 1

Pre-heat oven to 180 °C / 350 °F / Gas 4.

Step 2

Cream the butter and sugar until fluffy. Beat in the eggs gradually along with the flour. Add the baking powder, then the bananas and nuts. Fold well until thoroughly mixed.

Step 3

Spread the mixture into a greased 20 cm (8 inch) square shallow tin. Bake in the oven for 20-25 minutes until golden.

Step 4

Leave in the tin for about 3 minutes then cut into slices (about 12-16) and transfer to a wire rack to cool. Dust with caster sugar.

You could use mixed chopped nuts instead of the hazelnuts.
