Ingredients
- The Peanut Butter Cookie Dough
- 3/4 cup flour
- 1/4 tsp salt
- 1/4 cup butter
- 1/3 cup sugar
- 1/3 cup brown sugar
- 3/4 cup natural peanut butter
- 1 tsp vanilla
- The Chocolate Ice Cream
- 2 1/2 cups heavy cream
- 1 1/2 cups whole milk
- 8 oz bittersweet or dark baking chocolate, chopped
- 1/3 cup sugar
- 1/2 tsp salt
- 1 tsp vanilla
- 1/4 cup coffee liqueur
Preparation
Step 1
Making the Cookie Dough
In a small mixing bowl, combine flour and salt. In a separate mixing bowl, combine remaining cookie dough ingredients. Gradually mix in flour mixture until thoroughly combined. Place dough in refrigerator to chill.
Step 2
Making the Ice Cream
In a small saucepan, combine 1 cup of the heavy cream with the chopped chocolate. Stir the mixture over low heat until the chocolate is completely melted and combined with the cream. Remove from heat and set aside to cool completely.
In a large mixing bowl, whisk together remaining cream, milk, sugar, salt, vanilla and liqueur until sugar has dissolved. Once the chocolate and cream mixture has cooled completely, whisk it into the remaining ice cream ingredients. Pour ice cream mixture into your ice cream maker and run the machine for about 25-30 minutes or until the ice cream is formed. Place ice cream in the freezer to finish freezing.
Once firm, remove ice cream from freezer and remove cookie dough from refrigerator. Using a spoon, break cookie dough into small pieces and fold into ice cream. Place back in the freezer. Once firm, scoop and garnish with whipped cream, chocolate shavings and extra cookie dough.
