Another staple of my childhood, this recipe is one my mother adapted from the cooking textbook from her home ec class, though by now it doesn't resemble the original too much.

Ingredients

  • Wet:
  • 1 C butter
  • 3 C sugar
  • 3 Heaping (double) Tablespoons cocoa powder
  • 2 t vanilla extract
  • 6 eggs
  • Dry:
  • 1 1/2 C flour

Preparation

Step 1

Pre-heat oven to 350 F. Melt butter (in microwave).

Step 2

Mix butter and sugar together.

Step 3

Mix in cocoa powder. When measuring cocoa powder, scoop up as much cocoa powder with the measuring spoon as you can and do NOT level it off, but just put it all in the batter.

Step 4

Add vanilla extract

Step 5

Add eggs and beat into batter, one at a time.

Step 6

Slowly, add flour and mix.

Step 7

Pour batter into un-greased pan and cook for about 28-30 minutes, or until knife inserted into center of pan comes out clean

Step 8

Let cool a bit before serving
