Jalapeno Jelly

Ingredients

  • 2 jalapeno's seeded and chopped
  • 3 med green bell pepper
  • 1 1/2 c white vinegar divided
  • 6 1/2 c sugar
  • 1/2-1tsp cayenne pepper
  • 2 pouches liquid fruit pectin
  • 6 drops green food coloring

Preparation

Step 1

Place Jalapeno's, 1/2 of bell peppers, 1/2 c vinegar in blender and puree. Put in large heavy pot repeat with the rest of the peppers.

Step 2

Add sugar, cayenne, rest of the vinegar and bring to a boil. Stirring constantly, quickly stir in pectin. Return to rolling boil for 1 minute.

Step 3

Remove from heat, skim off foam, add food coloring and put into jars.

Step 4

Process 10 minutes in boiling water bath.

Makes 7 to 8 half pints.
