Ingredients
- 1 1/4 cups vegetable oil
- 1 cup brown Sugar
- 1 cup granulated Sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 3 cups shredded carrots approx. 3/4 lbs
- 1 1/4 teaspoons vanilla extract
- Cream Cheese Frosting
Preparation
Step 1
Add first 3 ingredients and beat with electric mixer on medium speed until blended. Add eggs, 1 at a time, blending after each.
Step 2
Combine flour and next 4 ingredients. Gradually add to sugar mixture, beating until blended. Stir in Carrots and vanilla extract. Pour batter into 3 greased and floured 9 inch round cake pans.
Step 3
Bake at 325 degrees for 30 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes; remove from pans and cool completely.
Step 4
Spread frosting evenly between layers and on top and sides of cake.
