Ingredients
- 3 lbs of Chicken (cooked)
- 3 tbs butter
- 2 onions
- 2 green pepper
- 1 c celery
- 2 c okra
- 3 cloves garlic minced
- 1 lb smoked sausage
- 1 pk of Bob Evans Sausage (cooked)
- 1 lb ham
- 2 14oz can diced tomatoes (with juices)
- 1 10oz can navy beans
- ole bay seasoning to taste (aprox: 3tbs)
- 2 bay leaves
- 6 c chicken stock
- 1 lb Shrimp (cooked)
- 4 c wild grain rice
Preparation
Step 1
Prep all veggies while boiling 6 cups of chicken stock. Add onions, celery, okra, peppers, garlic and butter (reduce heat to medium). Add all meat except shrimp. Cook for 10 min. Reduce heat to simmer and wait 30 min before adding tomatoes, fork smashed navy beans and shrimp. simmer for an additional 15 min. You can serve with or over rice. or You can add it to the soup. (adding it directly makes rice much softer. but I prefer it with a little texture so I serve over)
