Pork Stew

Ingredients

  • 2 to 3 c. cooked pork roast, diced
  • 1 large onion, diced
  • 6 potatoes, peeled and diced
  • 1 can mixed vegetables
  • salt and pepper to taste
  • 3 Tbsp. cornstarch, for thickening, add more if needed
  • 3 c. water or chicken stock

Preparation

Step 1

Put all but the cornstarch and mixed vegetables in a large pot, bring to a boil and cook until potatoes are done.

Step 2

Add the mixed vegetables, bring back to a boil, then add cornstarch to thicken. Serve.
