Rosemary Roasted Chicken With Potatoes

Ingredients

  • 2 Tbsp. olive oil
  • 2 tsp. paprika
  • 1 1/2 tsp. crushed rosemary leaves
  • 1 tsp. minced garlic
  • 1/2 tsp. black pepper
  • 1 tsp. salt
  • 2 lbs. chicken breast halves
  • 1 1/2 lbs. small red potatoes cut into 1 in. cubes

Preparation

Step 1

Preheat oven to 425 degrees F.

Step 2

Mix oil and seasonings in a large bowl. Add chicken and potatoes, toss until coated.

Step 3

Line 15 X 10 X 1 in. baking pan with foil and spray with no-stick cooking spray.

Step 4

Arrange chicken and potatoes in single layer in pan.

Step 5

Roast in oven for 30 min. or until chicken is cooked through and potatoes are tender, turning potatoes occasionally.
