Easy Baked Potato Soup

Ingredients

  • 4 cups chicken broth
  • 1 cup onion chopped
  • 1 cup carrots chopped
  • ½ cup celery chopped
  • 2 cloves garlic pressed
  • 6 cups potatoes diced
  • 1 teaspoon salt or to taste
  • ½ teaspoon pepper
  • ¼ cup all purpose flour
  • 1¼ cups heavy whipping cream

Preparation

Step 1

Turn slow cooker on high and add the chicken broth
Chop the onion, carrots, celery and garlic
Lightly sautee and add to slow cooker
Dice potatoes and add to slow cooker
Salt and pepper and cover
Cover and cook on HIGH for 3 hours or until vegetables are tender.
Using a hand mixer blend a small amount of the soup to make it creamy (OPTIONAL).
Blend the flour and cream together and stir into slow cooker.
Cover and cook for an additional 30 minutes on low.
