Carrot-Pineapple Muffins

Ingredients

  • 1 1/2 cups of flour(or use half whole wheat if desired)
  • 1 cup of sugar
  • 1 tsp. of baking powder,soda and cinnamon
  • 1/2 tsp. of salt
  • 2/3 cup of vegetable oil
  • 2 eggs
  • 1 cup finely-grated raw carrot
  • 1/2 cup crushed pineapple & juice
  • 1 tsp. vanilla

Preparation

Step 1

sift together flour,sugar,baking powder,soda,cinnamon and salt into a large bowl
add oil,eggs,carrot,pineapple and vanilla
blend until all ingredients are mixed together
bake at 350 degrees in muffin tins until done or golden brown
