Ingredients
- 2 pounds stew beef cubed
- 2 tablespoons olive oil
- 1 onion sliced into 8 wedges and separated
- 2 cloves garlic minced
- 2 cups beef broth
- 1 cup merlot
- 1/4 teaspoon ground black pepper
- 1 teaspoon thyme
- 2 sprigs rosemary
- 2 cup broccoli florets
Preparation
Step 1
In a large pot, add oil and heat over medium-high heat. Add onions, stirring frequently until translucent, about 8 minutes. Add garlic and cook an additional minute. Add meat to pan and the remaining ingredients, with exception to the broccoli. Cover and reduce to simmer, cook 1-1/2 to 2 hours until meat is tender.
Step 2
Remove lid and add broccoli, increase heat and reduce mixture down to sauce consistency, about 10 to 15 minutes. Spoon onto plates and serve. You may also serve over low carb pasta or mashed cauliflower. (addl carbs added)
May use warmed slow cooker after cooking onions and garlic.
