Ingredients
- 1 1/2 lb of salmon fillets
- 1 lemon halved crosswise
- 2 tablespoon basting olive oil
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh rosemary leaves
- 1/2 teaspoon each sea salt and coarse ground black pepper
Preparation
Step 1
Heat oven to 425 F. Spray a large baking sheet with nonstick spray. Place salmon on baking sheet, skin-side down.
Step 2
Cut lemon in half and squeeze half for 2 teaspoons juice. Cut second half into very thin slices and set aside. Combine juice with oil, rosemary and garlic; spread mixture over top of salmon. Season with salt and pepper.
Step 3
Bake salmon 12 to 15 minutes, or until the color turns from translucent to opaque. Do not over cook. Top with lemon slices and serve immediately.
Serve salmon with Steamable Wild or Brown Rice and a mixed green salad.
