Ingredients
- pastry for double 9 inch crust pie
- 2 cups thinly sliced potatoes (undercooked)
- 1 pint oysters with liquor
- 4 hard cooked eggs (shelled and sliced)
- 1/4 cup butter
- celery salt to taste
- lemon and pepper seasoning to taste
Preparation
Step 1
Place bottom crust in pie pan and put in well-drained potatoes.
Step 2
Remove oysters from container with slotted spoon and put over potatoes.
Step 3
Reserve liquor for sauce.
Step 4
Place egg slices over oysters. Dot with butter and sprinkle with celery salt and seasoning.
Step 5
Place top crust on pie and cut slits in top for steam.
Step 6
Bake at 400 degrees for 10 minutes then 375 minutes for about 30 minutes.
Step 7
Let stand and drain off excess liquid. Serve with sauce. (see tips)
Sauce: 2 tablespoons butter, 1 cup milk, 2 tablespoons flour, oyster liquor plus water to make 1/2 cup and salt and pepper to taste.
Melt butter, add flour. Slowly add milk, then oyster liquor stirring constantly until it thickens and comes to a boil. Add salt and pepper.
