Apple Pie

Ingredients

  • For the filling :
  • 5 baking apples, peeled, cored, and sliced thinly
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1 Pinch of salt
  • 1 tablespoon vanilla extract
  • For the topping :
  • 1/2 cup flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1 Pinch of salt
  • 5 tablespoons unsalted butter, cold and cubed
  • 1/2 cup oats

Preparation

Step 1

For the filling :
In a large bowl combine the apples, sugar, flour, cinnamon, allspice, salt, and salt. Mix together gently to combine, being careful not to break the apples. Let stand while you make the topping.

Step 2

For the topping
In the bowl of an electric mixer fitted with a paddle attachment, mix together the flour, brown sugar, cinnamon, allspice, salt, and butter until the butter is the size of lentils. Stir in the oats.

Step 3

For Assembly
Preheat the oven to 400 degrees F. Fit the pie crust to a 9-inch pie pan and trim the edges. Pour the apple mixture into the pie shell. Cover with the crumb topping, patting down, and making sure the apple slices aren't peaking out. Bake at 400 degrees for 20 minutes until the top is golden brown, then reduce heat to 350 degrees F and bake until the apples are tender and juices are bubbling around the edges. Cool for about 30 minutes before slicing. Serve with whipped cream or ice cream.

The best when it is still warm with vanilla ice cream on top of it. You can always heat it up for a few minutes in the microwave if you didn't get any right after baking.
