Ingredients
- 3 large tomatoes peeled and seeded
- 1/2 red onion in chunks
- 1/3 cup extra virgin olive oil
- 2 garlic cloves chopped
- 6 tablespoons red wine vinegar
- 6 cups diced crustless country type bread
- 3 cups finely diced tomatoes
- 2 cups finely diced cucumbers
- 1/2 cup minced onions
- 1 cup diced red pepper
- 1 cup diced green pepper
- 1/2 cup parsley chopped

Preparation
Step 1
Puree the 3 large tomatoes, red onion and garlic. Then stir in vinegar.
Step 2
Whisk in olive oil slowly and season to taste with salt and pepper.
Step 3
Top the bread with 1/2 of the above mixture and let set 30 minutes.
Step 4
Toss remaining ingredients together and serve.
