Ingredients
- 1/3 cup shortening
- 1 1/2 cups all purpose flour
- 3/4 cup sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoons salt
- 3/4 cup milk
- 1 egg
- 1 1/2 teaspoons vanilla
Preparation
Step 1
Grease and lightly flour a 9x9 inch baking pan.
Step 2
Place shortening in a small mixer bowl. Add the flour, sugar, baking powder, and salt. This easy one-bowl method does not require creaming the shortening.
Step 3
Add half the milk, the egg, and vanilla. Use a liquid measuring cup for the milk so you can easily see when you've added half of it.
Step 4
Mix at low speed of electric mixer till blended. Beat 2 minutes at medium speed. At the end of this time, the mixture will be thick and smooth as shown.
Step 5
Beat in remaining milk. Beat 2 minutes more at medium speed.
Step 6
When the mixing is completed, the cake batter will be smooth and fairly tick
Step 7
Turn batter into prepared pan. Bake in a 375 oven for 25 to 30 minutes or until a wooden toothpick comes out clean.
