- PANCAKES
- 3/4 cups flour
- 1 cup milk
- 2 egg whites
- 1 egg
- FILLING
- 3 tablespoons cream cheese
- 2 cups cottage cheese
- 1 egg white
- 2 tablespoons sugar
- Vanilla
Preparation
Step 1
For the pancakes: with a electric mixer combine the flour, milk, egg and egg whites until smooth.
Step 2
Coat a skillet with cooking spray and heat, pour in two tablespoons of batter tilting the pan slowly to cover the bottom. Cook until the underside is golden, about 15 seconds, and put on a plate.Repeat with the rest of the batter and set aside.
Step 3
To make the filling and baked blintzes: Squeeze the liquid from the cottage cheese by wrapping it in a thick paper towel or cloth and squeezing it. Put in a strainer and press with a spatula. Place the cottage cheese in a food processor along with the cream cheese, egg white, vanilla, and sugar. Blend until smooth.
Step 4
Preheat oven to 400F. Coat a baking dish with cooking spray. Spoon about two tablespoons of filling in the center of each pancake. Fold bottom of the pancake over the filling, forming a cylinder. Place the blintzes seam side down in the baking dish.
Step 5
Bake 15-20 minutes, until the center feels hot. Top with your favorite preserve and serve.
