Ingredients
- 3 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup shortening
- 1 stick unsalted butter, softened
- 1 1/2 cups sugar, plus 3 Tbsp.
- 2 large eggs
- 1 Tbsp. cinnamon
Preparation
Step 1
Sift flour, baking soda and salt into a bowl.
Step 2
With a mixer, beat together shortening and butter. Add the 1 1/2 cups sugar and continue beating until light and fluffy. Add the eggs, 1 at a time, beating well after each one. Add the flour mixture and blend until smooth.
Step 3
Mix the remaining sugar with the cinnamon in a small bowl. Roll the dough into 1 1/2in balls. Roll the balls in the sugar mixture. Flatten the balls into 1/2in disks and space them evenly on an ungreased cookie sheet. Bake until light brown, about 12 minutes. Cool about 5 minutes on a wire rack.
