Ricotta and Quinoa Chocolate Lava Cake (Gluten-Free)

Ingredients

  • 7oz dark, bitter chocolate
  • 6 eggs
  • 5 oz ricotta cheese
  • 4 tablespoons cooked quinoa
  • 3oz almond powder
  • 4oz powdered sugar

Preparation

Step 1

Melt the chocolate over a water bath or in the microwave.

Step 2

Once melted, mix the chocolate with the ricotta, then add the eggs (previously mixed in a separate bowl with a fork), followed by the almond powder and then the quinoa.

Step 3

Pour the dough into a ramekin or small cake mold, and bake in a preheated oven at 350F for 30 minutes.

Step 4

Let rest for a few minutes before taking it out of the mold. Serve warm.
