Simple Leek & Tarragon Fish Pie

Ingredients

  • 1lb seafood mix
  • 2 leeks, sliced
  • 1 cup double cream
  • 1tbsp olive oil
  • 5-6 sprigs fresh tarragon
  • salt and pepper
  • 1-2 a baguette, sliced
  • butter

Preparation

Step 1

Preheat the oven to 200°C/392°F.
Heat a pan with the olive oil and add the leek. Sweat for about 5 minutes.

Step 2

Add the seafood mix and season with salt, pepper and tarragon. Mix well.
Cook for 5 minutes, add the cream and leave for another 5.

Step 3

Transfer the mixture into a greased baking tray. Arrange the bread slices and spread some butter on each one of them.
Cook in the oven for 15 minutes or until the fish pie is ready.
