Ingredients

  • 2 slices bacon
  • 1 c. finely chopped onion
  • 2 c. frozen hash brown potatoes thawed
  • 2 tsps salt
  • 1/4 tsp pepper
  • 3 cans 8 oz each minced clams chopped
  • 2 c. half and half cream
  • 2 TBS butter

Preparation

Step 1

Chop bacon coarsely and place into a 10 inch skillet. Cook on medium high heat till almost crisp. Add onion and saute about 5 minutes stirring occasionally.

Step 2

Add potatoes, salt, pepper, clams with liquid, stir well and simmer 10 minutes. Stir in cream and butter. Serve with a sprinkling of parsley on top.
